Crops & Varieties: Tomatillos


Quick tips
We make a fantastic tomatillo salsa, and you can too! Roast tomatillos and mix with blend of chile peppers, garlic, onion, lime juice, cilantro or parsley and a bit of salt.

Fresh tomatillos have a bright tartness; most recipes call for roasting them, as this brings about a delicious sweetness.

Storage
In husks, they can be kept in the refrigerator for three weeks.

You may be receiving them with the husks removed; the best way to keep these is in a perforated or produce bag in the refrigerator. Use within about a week.

Preparation types & times

Blanching: 3-5 mins
Broiling: 6-10 mins
Dry Roasting: 20-30 mins (in heavy or cast iron skillet with low heat)
Grilling: 6-12 mins
