Recipe: Strawberry Bread

from Meg at Baker Gone Bye
Grease and flour 2 9x5 inch pans--loaf pans

Combine:
2 c. fresh (or frozen) strawberries-sliced or smooshed-
1 Tbsp. Sugar

In another bowl Combine:

3c + 2 Tbsp Flour---can use 1/2 whole wheat flour!
2c. sugar
1 tbsp. cinnamon
1tsp. salt
1 tsp. b. soda

Add to berries and sugar:
1 1/4 apple sauce
4 eggs, beaten

Add dry stuff to wet stuff, and mix til blended.

Dump into loaf pans that have been greased and floured (maybe 1 big and 2 small if you want to share it) and bake @ 350 degrees 45-50 min, or until toothpick comes out clean.
 
Not vegan, but egg replacer can be substituted for eggs!
