Beet marbled eggs

This year we used beets to marble and dye the surface of our hard boiled eggs, and they are so pretty we almost didn’t want to eat them!

Then we did and now they’re gone. Be sure to make a double batch so you can have some for your holiday festivities. They save very well.

INGREDIENTS

2-3 beets, chopped

2 cups water

6 hard boiled eggs

1 cup apple cider vinegar

1 sliced onion (optional)

1/3 cup salt

1/3 cup sugar

paprika, garlic powder (optional)

INSTRUCTIONS

The ingredient list you see above (minus the eggs) is basically what’s called a quick pickle brine. All you need to make it red are the beets and water. The rest bring some flavor to balance the beets. Add spices as you like! We added some garlic powder. To make the brine, cook everything listed above except the eggs until the beets are soft. Let it cool. Then, use a wooden spoon or something not too hard or soft to gently tap the hard boiled eggs so that you make little cracks throughout the shells. Submerge the eggs in the brine, cover and let sit for at least a few hours in the fridge.

The eggs will be fully dyed after about 24 hours. The picture you see of our marbled egg experiment is just 12 hours of sitting in the brine. Note: do not salt the marbled egg before eating, it is perfectly salty from the brine.
