Quick faux ice cream

We invented our own quick “ice cream” formula. It starts with frozen fruit - strawberry, raspberry, the Sno Pac berry blend, even a frozen banana. This part is pretty important, you need something frozen to emulsify. Ends with a blender and whatever milk or cream you’ve got. If you’re wanting just a straight chocolate or vanilla, there’s a way to make that, too. See below. Isn’t this just a smoothie? Not if you put it in an ice cream bowl and call it ice cream.

INGREDIENTS

1 cup of frozen fruit*

3/4 cup milk, cream, or some combination of milk and cream**

1 tablespoon of honey, bit more for drizzling

dash of vanilla extract

drizzle of olive oil

pinch of salt

INSTRUCTIONS

Blend the fruit, milk, honey and vanilla extract together. Serve immediately with a drizzle of olive oil and honey and a pinch of sea salt.

*For chocolate, sub 1 cup of frozen fruit with 1/2 cup of ice, add 2 tablespoons of cacao and use a bit more honey - sweeten to taste. For vanilla, do the same, but without cacao.

**Feel free to add a little sour cream or yogurt to the mix to make it a bit more creamy.
