Simple buttermilk sugar cookies

Sometimes you just need to eat a batch of cookies in one sitting and not feel bad about it. Welcome to these Brian Severson cookies from heaven. Great if you want to decorate them, also wonderful on their own. Overcooked? Awesome biscotti. Undercooked? So good we could cry. Just right? Stop the presses, we have arrived at our favorite simple cookie.

INGREDIENTS

1 cup Severson flour

1/4 cup buttermilk (an egg or applesauce will also do)

3 tablespoons room temperature butter

1/3 cup coconut sugar

1/2 teaspoon of baking soda

1/2 teaspoon vanilla extract

pinch of salt


INSTRUCTIONS

Cream butter and sugar, add buttermilk and vanilla extract. Mix the remaining dry ingredients, add to wet mix, stirring slowly. Spoon out balls of dough onto parchment paper, bake for 8-11 minutes (depending on your oven!) at 350.

Want to jazz it up? Try this red beet icing, top with this pumpkin spice buttercream frosting, sub melted butter for olive oil, add some citrus zest to the batter, or top with your own homemade egg white sprinkles.
