Make the most of your fennel

We haven’t grown our own fennel in some time and we just can’t get enough of it this year. The licorice flavor comes alongside loads of potassium, sodium (the good kind), phosphorus, and calcium. It’s also got a bunch of essential fatty acids, and magnesium! We just harvested our last hoop so we’re doing our best to get the most out of it while we can. Some thoughts below.

SHAVED FENNEL SALAD

Some of the best things in life are simple and such is this simple fennel salad. Lemon, shaved fennel, and olive oil make for a perfectly balanced plate. Add a little parmesan if you want to mix things up, some shaved carrots if you want to sweeten it a bit. Perfect as a digestif.

FENNEL SODA

Okay, okay, we have a thing for sparkling water with a bit of homemade syrup, we admit, but you absolutely have to try this fennel basil soda concoction. The adult sweet cocktail-like refreshment you seek awaits you.

FENNEL & LIME CREMA

Ready for the ultimate flavor bomb? This fennel and lime crema is brilliant for all manner of taco, nacho, Buddha bowl, rice bowl, anything bowl topping. Try it with these fennel potato latkes. Will be difficult to save any for later so be sure to make a double batch.

FENNEL GRATIN

This fennel gratin recipe is the sort of gourmet comfort food you’ll want to write grandma about. Layered with cheese and garlic and thinly sliced fennel, this casserole like dish keeps well throughout the week and is just as good cold as it is hot.
