Turkey salad for days

We like turkey, but we prefer it smothered in all sorts of things. Enter: the turkey salad. Lots of ways to get this done. Enjoy your Thanksgiving turkey all week!

INGREDIENTS

Basics

Turkey, dash of EVOO. Not doing turkey this year? This is also a good recipe for the 5-spice tofu, chicken, radishes or hard-boiled eggs.

Something creamy

Mayo, yogurt, sour cream. Mayo is our favorite for a turkey salad, but all are good. It sounds nuts to us for some reason, but you can and we have successfully mixed two of the three together for heightened degrees of creamy.

Something sweet

Dried cranberries, chopped Asian pears or apples

Something savory

Onions or scallions, a bit of chopped garlic

A nutrient burst

Fresh herbs - parsley, cilantro, rosemary, basil, thyme, sage all does well, or chopped spinach, arugula or mesclun that you’ll want to add right before you serve.

A kick

Lemon juice

Mustard

Salt and pepper

INSTRUCTIONS

Mix together. Too dry? Add more EVOO, lemon juice, or creamy element. Don’t have anything sweet? Top with a bit of cranberry sauce.
